Healthy fudge

Yesterday I made the most amazing healthy fudge from the Deliciously Ella cookbook. They literally taste exactly like fudge and are extremely simple to make. I almost ate the whole batch as soon as it was done! These are stored in the freezer or fridge as they can get quite sticky if they are left out at room temperature too long. They are perfect for when you have that sweet craving but don’t want to eat something too unhealthy!

400g pitted Medjool dates
10 tablespoons almond butter (recipe https://roseelephants.com/2017/01/21/almond-butter/ )
4 tablespoons coconut butter
3 tablespoons raw cacao powder (or cocoa powder, but double the proportions)

Start by cooking the dates on low heat in a saucepan with boiling water for a five minutes until they stick together. Then take them off the heat and let them cool for a few minutes. Put the dates, coconut butter, almond butter and cacao powder in a food processor and blend until they form a sticky ball. Take the ball out and place it in a lined tin. Squash it down so that it lies flat in the tin and set in the freezer for 2-3 hours. Take it out and cut into pieces of your desired size. Place in an airtight container in the fridge or freezer until a sweet craving strikes… or just eat them all at once!
