Yesterday I made the most amazing healthy toffees from the Deliciously Ella cookbook. They literally taste like fudge and are extremely simple to make. I almost ate the whole batch as soon as it was done! These are stored in the freezer or fridge as they can get quite sticky if they are left out at room temperature too long. They are perfect for when you have that sweet craving but don’t want to eat something too unhealthy!

This is a really easy muffin that can be made in under 10 mins. You can eat them as a snack throughout the day or as soon as they come out the oven. You can also freeze them for as long as you want since they don’t really go off, but I would recommend eating them within 1-2 weeks (if you can make them last that long…). This is a tried and tested family recipe which has always had great responses. It is perfect for a quick snack when you need an easy pick-me-up since it has oats in it, which slowly release energy so you won’t feel as tired towards the end of the day!
